Regarding imitation crab, it's actually starch and finely pulverized white fish that has been shaped and cured to resemble crab legs. Mixed with cream cheese, stuffed in wonton wrappers, and deep fried, it's actually pretty good. Especially with sweet chili sauce.
No, we're serving jumbo lump crab with avocado and cilantro lime dressing, atop microgreens. You're going to love it. Unless you have a shellfish allergy, in which case we would not recommend the crab.
