Mohonk Mountain House is a great mountainside getaway ~2hr drive from NYC. They have beautiful trails and a rock scramble for those more adventurous. There is also a wonderful spa if you are looking for some R&R. // Cold Spring is a historic town ~1.5 hr drive from NYC. There are lots of boutiques and good eats. The town is nestled between the Hudson River and a state park so there are great views and easy access to nature. // Long Island Beaches (Hamptons, Montauk) are ~2-3 hr drive from NYC or you can take the LIRR. There are historic towns with great shopping and eats. Great place to go to the beach or shopping during the day and go out at night. // NJ Beaches are ~1-2.5 hrs from NYC. Long Branch is closer to the city (~1hr) and has great restaurants and a beautiful beach. Cape May is historic beach town ~2.5 hours from NYC. There are great shops, restaurants and beaches.
