A popular choice for birria. Birria is a traditional Mexican dish that started in Jalisco but is now popular all over Mexico (and the U.S.). At its core, it’s slow-cooked meat — usually goat, beef, or lamb — braised in a rich chili-and-spice sauce until it’s tender and flavorful. People eat it in tacos, as a stew, or dipped in consommé (a savory broth made from the drippings), and in the U.S. you’ll often see quesabirria tacos — cheesy, crispy tacos dunked in that broth — which is the modern craze.
