303 In the Cut
There is another location in Vegas, but this is the original one. Open from 7PM-1AM, this food truck is chef's kiss. Between the Dirty Dog and the Raspberry Cheesecake that is made in front of you, there is not much else you could wish for. 10/10 spot for spontaneity and late-night cravings.
Hash House A Go Go
This place gives brunch a whole new meaning. They have everything you could think of and then add their own creative twist to it. It is definitely a place to try out.
