If you are looking for something other than resort food, try Navios. You will have dinner dockside along the lagoon. The view at sunset is gorgeous and the food is amazing.
Green Bay Marina

We also love this place for great seafood. It is a little hidden so make sure to really keep your eye open for the walkway then just continue down to the restaurant along the marina.
La Casa del Habano Cancún

Pro Tip: The Cuban cigars they sell on the beach and at your resort are fakes. This is the only place in Cancun that sells the forbidden fruit. They also have a full bar and the mojitos are the best we have ever had. Adults only.
