The meal options are as follows: Beef Wellington Beef Wellington, aged then marinated overnight and slowly cooked in a Burgundy and Champignon sauce and wrapped in a golden brown puff pastry, topped with horseradish cream sauce and served with seasonal vegetables and roasted red potatoes. Chicken Breast a L'Ancienne Fine herb breaded chicken breast with a mirepoix béchamel sauce and served with roasted vegetables and wild rice. Honey Glazed Salmon Oven-roasted salmon filet topped with Colorado honey glaze and pepper succotash. Served with roasted vegetables and wild rice. Venue will provide alternative meals according to dietary restrictions (ie. vegan, vegetarian, dairy free, etc.)
