For our out of town guests, we recommend flying into the San Diego Intl. Airport. The wedding venue is ~1 hr. from the airport and we recommend renting a vehicle or carpooling where feasible, to the hotel of your choosing. 
There are many hotel options in Fallbrook and the surrounding areas. Simply search "hotels near Los Willows Wedding Estate" and you may browse your options. I've included some options below.
