Appetizers will be tray-passed and are as follows: Creamy jalapeño soup shots Blackened chicken spring rolls with honey-cilantro pesto sauce Shrimp ceviche served on cucumber slices Tortilla chips topped with pulled pork, pico de gallo, and avocado Dinner will be buffet-style and is as follows: Carnitas Roasted poblano pepper stuffed with wild mushroom risotto, smoked gouda, brie, and chipotle cream sauce Mexican rice Mango salsa Refried black beans Mexican caesar salad On each table, there will be: Chips with roasted salsa and fresh guacamole For dessert, there will be: Churros with chocolate and caramel sauces on the side Bride and groom-styled chocolate-dipped strawberries Wedding cake of alternating mimosa and salted caramel layers and vanilla whipped mousse filling
