Our Story

One evening on a busy Saturday, a very handsome, sarcastic bartender was partnered with a very clumsy, new server. Much like the beloved chicken crispers paired with honey chipotle sauce, this perfect match was made at Chilis Bar and Grill. After their first shift together, Evan and Aly were rarely out of touch. Evan started a tradition of sending Aly a new song after he had heard it for the first time. They quickly bonded over classic rock and country music, dogs, hiking and (Evan’s specialty) sarcastic humor. Over the course of a year and half, the two became close friends. After daily texting and a few outings after work with other coworkers, Evan finally asked Aly on a real date. She knew he was a keeper when he didn’t get upset after she accidentally knocked her cup over and he endured a lap full of ice water. No worries, on date three she made up for it by recommending they go to the animal shelter, where he met his true love...their dog, Chief. One morning Aly woke to a text saying “So how’s my girlfriend doing this morning?” And the two have been together ever since! Going through three moves for school, graduating college, and starting their careers together, the couple quickly learned they make a great team. They set down roots near Aly’s hometown and moved into a starter home. Soon after, Aly decided Chief needed a brother. Evan always said he would never live with a cat, but a trip to the pet store, one pair of puppydog eyes, and A LOT of begging later...their cat Gryffin moved in. After five blissful years together, he FINALLY decided it was time. For their first vacation alone together, they took a trip to the Estes Park. After an amazing day in the mountains, back at the cabin, he asked Aly to check Chief for ticks from the hike. He had slipped a note under Chief’s collar that read, “Dad was wondering if you’d be my furever mom?” When she turned around he was down on one knee.
