Keeneland Race Track

Unfortunately, racing doesn't take place in May, but the course is open to the public everyday and is a beautiful place to stop by for a few minutes and walk around. The track also hosts horse training every morning 6 am - 10 am and is very cool to see.

Lexington Brewing and Distilling (Town Branch Distillery)

The most prominent distillery in the city and easiest one to access if staying downtown. Mitch prefers their beer to their bourbon, but their tour and experience is as good as any without a 30+ minute drive. Book tours / tastings sooner rather than later, as they tend to sell-out quickly.
