It all started over the love of making sandwiches. For years, they made sandwiches together. One sandwich turned into hundreds, and with each one, they grew a little closer, a little more certain that what they were building was more than just lunch. After a dinner outing with coworkers, a spark ignited between Kevin and Emma leading to many adventures and fun dates. Their first official date was at Mitocayo, an elevated Mexican gem nestled in Logan Square, Chicago. The night was unforgettable—not only because it was Kevin’s birthday, but also because it marked the moment he became an uncle. As they said their goodbyes, hearts full from a perfect evening, Kevin received the news that his niece, Nadia, had been born. A celebration of life, love, and new beginnings—forever etched in their memories. Over the course of the next 2.5 years numerous adventures, escapades, and experiences were enjoyed. These include, family vacation to the Ozarks, enduring a treacherous thunderstorm in Missouri in the Mercedes, car week in California, sailing in Lake Geneva, hikes around Northerly Island and Starved Rock, saying hello to the raccoons at the lake shore in Chicago, making many many tasty meals, and, of course, Barcelona and Andorra. While in Barcelona, Kevin decided to pop the questions. After 12 hours of travel, a quick 2 hour nap, in a rainstorm, on the top of a hotel overlooking the Sagrada Familia, Emma said “yes” to the start of forever with Kevin. The rest of the week was spent touring the coastal city and trekking through France to ski in the Pyrenees mountains in Andorra. From sandwiches to soulmates, their journey has been one of simple joys and grand adventures. And this, beautifully, is only the beginning.
