We're setting Google Alerts for flight deals and will forward them when we see good ones!
We'd recommend flying to a big hub like Barcelona, Madrid, London, Paris and then buying a flight to Mallorca from there. Once you get to Europe the flights are much cheaper!
It's a 35 minute drive from the airport (Palma de Mallorca) to Deià. We'd recommend renting a car and will do some research on the best place to rent a car.
