While visiting Camilo's hometown of Bogotá, Colombia for the holidays in December of 2021, Camilo and Lindsey checked out several beautiful green Colombian emeralds. Unbeknownst to Lindsey, Camilo arranged for her engagement ring to be made with one of the emeralds they saw in less than 24 hours and had his brother and sister-in-law pick up the ring for him since they were all traveling to Panamá​​ the next day. While in Bocas del Toro, Panamá​​, Camilo told Lindsey that his friends in the tourism industry had gifted them a night at Azul Paradise on Isla Bastimentos. The hotel was dreamy with over-the-water bungalows and remote white sand beaches. When they were returning from the sloth tour, Camilo and Lindsey noticed they were setting up a romantic dinner, complete with rosé. Lindsey was still clueless and believed his friends had planned this all for them. In the middle of snapping photos of the sunset, Camilo exited the bungalow with a black ring box and got down on one knee! Obviously she said YES!

Camilo and Lindsey met in the beginning of the pandemic via Bumble, an online dating app. Camilo was looking for a blue eyed girl, and Lindsey was looking for a Latino man. Well...they found each other. For their first date on May 16, 2020, Camilo made Lindsey homemade chocolate chip cookies and cheese bread, which they enjoyed in Lookout Park in Corona Del Mar, CA (because most restaurants were still closed at that time). For their second date, Camilo took Lindsey for a motorcycle ride to one of her favorite restaurants, Rancho Capistrano Winery in San Juan Capistrano, CA. For their third date, Camilo wowed Lindsey with his cooking again by making her Moqueca De Camarão at his apartment in downtown Los Angeles, CA. The rest is history...They have been adventuring, and Camilo has been cooking Lindsey delicious meals ever since!
