We're Getting Married!

We met in the midst of the pandemic, through my (Rachel) cousin, Nick. Nick and I grew up together and stayed close after high school. A few weeks after college started, we met up for dinner to catch up. I had a friend I wanted to introduce to Nick (Taylor), and Nick had a friend that he also wanted to introduce to me. So, a few weeks later, Taylor and I drove down to Mankato to meet these guys. The rest is history! We went to Minneopa State Park, had dinner at 507 grill, then went back to the dorm. Cole and I watched Titanic while Nick and Taylor played Mortal Kombat (she won). After a few weeks of talking everyday, Cole asked me to be his girlfriend the day before Halloween at Applebee's. We are so lucky that we had a strong relationship during our long distance, and now live together. We have been together for over 5 years and are so excited for many more to come.

We went to get a casual dinner in Maple Grove on a Monday night in March. It was one of the only nice days that week. We grabbed Crumbl cookies for dessert, which Cole was “craving” recently. While waiting in line for cookies, he was nervous that the ring wasn't in the case, so he opened it in his sweatshirt pocket to make sure it was still there. When he went to close the box, it made a loud snap. Luckily, Rachel didn’t notice. Cole started to drive home, but then pulled into a place called Henry’s Woods in Rogers, so he could “eat his cookie”. We got out to walk around, and Rachel had a feeling she knew what was happening. Cole said “I hope I didn’t ruin the surprise” and got down on his knee. Rachel immediately started crying and said yes!
