St. Nicholas Abbey’s great house, built by Benjamin Berringer in 1658, is one of just three Jacobean style mansions remaining in the Western Hemisphere, and one of the finest historic sites in Barbados. Located in the hills of St. Peter, St. Nicholas Abbey encompasses over 400 acres of sugar cane fields, tropical gullies, mahogany forests and formal gardens.
Harrison's Caves was one of the first places Elizabeth explored on her inaugural trip to Barbados in 2003. Located in the central uplands of the island, this crystallized, limestone cave is characterized by flowing streams, deep pools of crystal clear water and towering columns.
Chattel house is a Barbadian word for a small moveable wooden house. The term goes back to the plantation days when the home owners would buy houses designed to move from one property to another. Chattel Houses are visible throughout Barbados, and this brightly painted chattel village has various souvenir shops and boutiques. There are also some cafes and eateries in the area.

Fishcakes, “cutter” sandwiches, and rotis (curried meat in flatbread) are popular dishes. Fried flying fish is our favorite local meal, with a side of Bajan coleslaw and breadfruit chips. Rum is the national drink, and rum punch cocktails can be found everywhere. Banks, the local beer is excellent too! Be sure to stop into a Barbados Rum Shop, there are over 1500 on the island and an integral part of the culture. A service charge of 10 to 15 percent is usually added to the bill in a restaurant. Additional gratuity is at your discretion.
