Hike Punta Lobos
Beautiful hike right next to Hotel San Cristobal. We'd recommend going in the morning before it gets too hot.
Surf Lessons and Rental at Cerritos Beach
Cerritos beach is a ~15-min drive from Todos Santos. It's a safer beach to swim/surf than those around Todos and you can book surf lessons or rent boards.
Off Road Rentals
Rent an ATV or 4x4 and get suggested routes for where to go. We loved the "private beach" / Playa Las Palmas route - if you're lucky you'll see wild horses.
La Paz Boat Charter
If you have an extra day in town, we'd recommend driving the 1-1.5 hrs to La Paz for a private boat charter (we've done El Duque, but there are many others http://www.elduqueadventures.com/en). We've done the 7-8 hour day (snorkeling, etc) and have heard the whale shark tour is excellent. Save some time to walk the La Paz boardwalk for a drink or dinner after.
