If you go to the Minnewaska State Park Preserve visitor center you can do a really nice hike/walk around Lake Minnewaska there!

Rhinebeck is a cute town to walk around as well !

Not actually where Woodstock (the festival) was, but it is a cute town with a bunch of resturants
