We met on a wild night out in Dublin, Ireland. Elizabeth was studying abroad and Joe was on a rugby tour with his Med School. We happened to be staying at the same hostel. The rugby team invited the study abroad group to a rugby match, so the girls went to the game and celebrated afterward singing around a piano with Joe's mates and pints Bulmer's Cider and Guiness. The rest is history!

Several years after our first meeting, we reconnected over social media while Joe and his best friend James were traveling across the States. Joe & James came to stay in Encinitas, and we picked up where we left off. After a week together and a road trip to San Francisco, Joe returned to England. We kept in touch and started visiting each other. After years of long distance, we finally moved to New Zealand to start our lives together in the same country. We lived in New Zealand for 6 years before moving to North Carolina for Joe's ECU Psych Residency program.

Joe popped the question while we were at Mezcalito's beachfront bar in Cozumel. He knelt down next to the hammock where I was lounging and asked me to marry him and I of course said yes!
