Austin and Ellen’s story began in the year of 2016 in Mankato, where they met while working at Chipotle Mexican Grill and quickly formed a connection that felt easy and natural. Their early days were filled with coffee dates at The Coffee Hag, friendly chess matches on their phones, and a standing Tuesday lunch tradition at Panera Bread. Austin’s calm, go-with-the-flow personality beautifully complements Ellen’s thoughtful planning and love for organizing their next adventure. Over time, their shared passion for traveling and camping created countless memories and strengthened their partnership. In 2018, they welcomed their son, a joyful milestone that shaped their lives in the best way. Through every season—both the light and the challenging—they have grown together, building a foundation of love, resilience, and deep commitment that brings them to this special day.
