Arrondissements to stay: the 7th is where the Eiffel Tower is located. I’d recommend exploring Rue Cler market street (7th).  the 8th is where the Arc De Triomphe, Champs-Elysees

Spend time in old town.  It has a lot of night life. 
If you want to enjoy wine tasting (what Bordeaux is known for :) )- you must book a tour in advance (at least 2 months).  Wineries are generally not open without reservations or outside of wine tour.  Expedia, GetYourGuide or Viator have options.
