The COVID vaccine is currently not required to enter Mexico however you do need a negative COVID test result within 3 days of re-entering the United States by air. If you plan to enter overland (ex. Tijuana/San Diego), you do not need to be tested to re-enter.

You bet! Please make sure that your passport will still be valid during the trip! Per the US Embassy's website, Mexico does not require a 3 or 6 month validity from the expiration date - but it does need to be valid at the time of travel.
Merida is a coastal city within the Yucatan state, just 3 hours north of Cancun. Yucatecos are gentle, respectful people. The city of Merida is considered to be the safest city in Mexico! The villages outside of the city are quiet, small and peaceful.

Uber and Cabify are available in Merida as well as taxis. If you're staying in Centro Mérida, it is a very walkable city. But note that while it may be easy to get out of the city limits, it will not be easy to get an Uber back into the city. Pre-arrange a taxi or service if you plan to venture out. There are taxis available from the Merida airport to the hacienda and taxis in Merida. But having a car and being independent is part of the experience. The city is located amidst an array of cenotes, convents, and ruins and getting from sight to sight is not difficult by car.
The ceremony and the reception will be held on a 18th century hacienda so there is quite a bit of cobble stone and grass. Our planners wanted us to make sure that our guests keep in mind that the events will be outdoors so while your most stylish dancing shoes will be great, for your safety we don't recommend wearing stiletto heels! Platforms, yes! Stilettos, no.
