Nick and Anjali first met during freshman orientation at the University of Toledo, but their story didn’t truly begin until sophomore year. Both bioengineering majors, they became close friends through mutual friends, shared classes, and plenty of time on campus. On May 4, 2021, they officially started dating after a first date at Panera that turned into a six-hour walk through the Toledo Metroparks. It was one of those unforgettable days that felt like the start of something big. From there, they began their favorite traditions, like making a new friendship bracelet every year and monthly Red Robin dates, now 56 months and counting! Nick proposed during a trip to St. John in the U.S. Virgin Islands. He made breakfast for Anjali, and on the balcony of their cottage, he asked her to spend forever with him. Just as she said yes, a rainbow appeared in the sky. Now they’re building a life together in Jacksonville, filled with love, laughter, and the little traditions that started it all.
