We met on Coffee Meets Bagel—even though neither of us is particularly into coffee, bagels, or trusting our romantic fate to an app. However, if it had been called Matcha Meets Taco, we would've been first in line! Our first date was on Easter Sunday 2023 (yeah, super holy right?), and let’s just say it was unforgettable. One of us got baptized again—but not in the traditional sense. Let’s just say laughter + shaved ice = accidental baptism. Can you guess who baptized who? Cough Susan the Baptist. That evening, we hit up a Korean wing spot… where the wings we ordered never showed up. Still waiting, by the way. We took it as a sign: no wings needed, because we were the ones taking flight. (Cue the slow zoom-in and corny music) Fast-forward 865 days, countless "Soliz Casa de Tacos" runs, gallons of matcha, and a few “do you see yourself with me possibly forever or are you tired of me yet?” banter, we made it official on the 8th level of Mt. Fuji in Japan. 5 minutes in after the proposal? Our very first obstacle as an engaged couple - making it down the mountain safely during a thunderstorm to catch the last bus home. Because nothing says “we’re doing this!” like sweat, rain, and happy tears all blending into one extremely wet, unforgettable moment. Hands down the most nerve-wracking and happiest moment of our lives. Now, you can find us balancing each other out in the most chaotic harmony: she’s a homebody who thrives on movies, pilates, and long park walks, while he’s out here running, biking, lifting weights, and dragging her out to Houston Rockets basketball games. We bond over faith, mountain biking with zero regard for gravity, willingly destroying ourselves in Spartan races each year, eating our way through Houston's Chinatown, stepping on each other's toes when dancing, and cooking up a mean sinigang stew and kimchi fried rice. God clearly had a plan—from a dating app and a no-show chicken wing order to a very splashy Easter date. Now, we’re just two lovebirds, doing life together one taco and one cup of matcha at a time. We're ready to embark on the greatest adventure of our lives and we're excited to see what the Lord has in store for us.
