We’re getting Married!!

We first met in the Tractor Supply parking lot in North Platte, Nebraska. Jacob was working with On the Hook Fish and Chips food truck, and I was still in high school, out on my lunch period with a friend and on the hunt for something to eat. When we placed our order, Jacob struck up a little small talk, asking what there was to do for fun in North Platte. I jokingly replied, “I mean… we have a Walmart.” He laughed, handed us our food, and that could have been the end of the story — but it wasn’t. Later that evening, I managed to get his Snapchat and learned that his birthday was the very next day. He asked if I had any recommendations for a good Mexican restaurant to celebrate with his friends. Now, if you know my mom, you know we grew up in a very “ingredient-only” household — eating out wasn’t common because she could make just about anything better at home. Still, I did a quick Google search, found a local spot, and sent it his way. They went… and unfortunately, one of the guys may have ended up with food poisoning. Oops. Life carried on, and we didn’t reconnect until July of 2019 — but as it turns out, a food truck, a Walmart joke, and a questionable restaurant recommendation were just the beginning of our story.
