Our love story began over hot coffee and fluffy buttermilk pancakes at our friendly IHOP diner. We were both servers when our paths first crossed. Shannon thought Kaplan had the most incredible smile and laugh, but it was his kindness towards everyone and his undeniable warmth that truly captivated her. Kaplan couldn't resist Shannon's captivating eyes that sparkled during their easygoing conversations, and her quirky, upbeat spirit always brightened his day. Our connection went beyond late-night IHOP refills. Long walks around town turned into laughter-filled adventures, and late-night chats blossomed into plans for weekend hikes and camping trips beneath a canopy of stars in the majestic mountains. We discovered a shared love for music and playing instruments, getting lost in the worlds of video games together, and unwinding with our favorite shows. Our relationship blossomed into something deeper as we aligned with fitness goals, prepping healthy meals together, and discovering a shared love for family and community. We fell in love and knew we had found something special in one another. It wasn't just the shared interests and laughter, but the deeper values we both held dear. We couldn't imagine a life without one another by our side.  We knew we had found in each other, a partner who championed our dreams, supported our goals, and shared our love for family and community. It was from this that Kaplan asked Shannon to marry him, and she joyfully accepted. And now here we are, ready to celebrate with family and friends and embark on the next chapter of of our love story, a future filled with laughter, adventure, and a love that only grows stronger with each passing year.
