Joyce Chen was a Chinese immigrant to Massachusetts who discovered Americans had a growing interest in authentic Chinese cuisine.She began by making meals for nearby college students, and after a successful school fair selling homemade egg rolls, she taught cooking lessons, opened restaurants, and wrote a cookbook. Joyce Chen invented the flat bottom wok and, thanks to starring in a PBS cooking show, she is credited for bringing Asian cooking to North America.
