Froggy's was founded in the summer of 1980 by co-founder Chef Thierry Lefeuvre. After a few successful years, Froggy’s responded to the ever increasing customer demand for diversified services by opening Froggy’s Catering with Thierry Mace as the director of all off-premise affairs. Thierry Mace was born in Brittany and has worked in England, Germany, and the Caribbean. I am a private Sushi Chef with more than a decade of experience. I first learned the Japanese Art of Sushi in Venezuela. I continued practicing this multidisciplinary craft in 3 countries before I settled in Chicago, IL, where I live now. Welcome. Chef Jason started out in the kitchen at 15 years old as a dishwasher at Red Lobster washing dishes and baking. From there, he worked many cook’s lines until I earned my first chef position under Emeril Lagasse over ten years ago. He's went on to operating casino kitchens, private dining clubs. Since relocating from Atlanta, GA Jason has gained experience in kitchen consulting and new restaurant openings. After 25 years in the industry, He is now starting a new journey into the Private Chef sector. He refers to his style of cooking as Southern Creole cooking, where it’s much more than cooking…it’s about the overall experience.

Since 1995, China Moon has bartended for dive bars, house parties, underground events, celebrity bashes, and fine dining establishments in NYC and the Midwest. She’s an old soul with a heart for gardening, reading, music, dancing, animals, and, when it’s safe again, putting her passport back in the rotation. She holds a degree in Hotel & Restaurant business management, was the Private Dining & Event Manager at The Edgewater Hotel from 2016-to 2018, and is a member of the Beta Beta Psi chapter of Phi Theta Kappa. China Moon is an eager reader (and dotes on Stephen King and Dean Koontz novels.) She loves aged Brugal Rum on the rocks with lime.
