Franco
I am a private Sushi Chef with more than a decade of experience. I first learned the Japanese Art of Sushi in Venezuela. I continued practicing this multidisciplinary craft in 3 countries before I settled in Chicago, IL, where I live now. Sushi making is a very personal experience for me and I enjoy creating something unique with the food colors, textures, temperatures, and flavors.
Sushi for me is perfection and by doing Omakase is a way to elevate Sushi. Omakase means Chef Trust or the Chef interpretation of Sushi respecting the traditional Japanese way, with an open mind for combinations including Kosher, Vegan or Vegetarian.

A Wonderful Experience
Chef Franco brings such a wonderful experience to your home! We’ve hired him three times, and we’ll definitely have him back in the near future. He takes great pride in his work - each course is thoughtfully planned out, beautifully represented and mostly importantly, absolutely delicious! His company is pleasant, and respects your home - leaving it spotless before he leaves.
Run don't walk....
I cannot speak enough good things about Franco and the experience he provides to his customers. He is communicative and clear in process leading up to the event. Once he arrives, he brings all of his own materials which takes hte stress out of a chef cooking in your own home. The food is absolutely incredible. He finds the freshest fish in the area and has an expertise in mixing flavors together. The most fun part is experiencing the chef cooking in front of you. This is especially fun for anyone with bar stools where you can watch him at work. He brings fun tools like blow torches and fryers to give you a full in restaurant like experience. And finally, nothing beats an evening with Franco himself. He is such an interesting person with a diverse set of life experiences. We could sit and talk to him for hours. In the past, we have bought a bottle of Japanese whiskey which we drink with him while he cooks. This is a great activity or date night for a special event like birthday or anniversary or just to change up your normal routine. We cannot recommend Franco enough!!!!
