I have worked in the service industry literally as long as I can remember! From entertaining strangers in our home to dining with a plain community family to working at the bedside of the sick and aging. I have always yearned for entertaining from behind a bar. Seven years ago, I decided to go to bartending school where I learned what it really means to be a mixologist! Event bartending is a very different ambiance than the dive bar we've all been to!

We prepare healthy food by hand; especially crafted for each individual menu and style. We take into account dietary needs, preferences, and restrictions. We use traditional methods of soaking grains, bone broth, and most importantly low and slow. We are known for our BBQ and we take this time-honored tradition very seriously using only real wood, real ingredients, and a lot of time. Beyond BBQ we continue these beliefs into the traditional kitchen with the care and love you would find at Grandma’s house.

In 2016 and early 2017, PaperMill started out as a humble food stall down at Bondi Beach farmers market in Sydney, slinging out Spurritos and bowls to avid beach-goers! Alex, the founder and his mates could be found at a range of weekend markets and music festivals, working from a going along with the ride, testing new flavours, feeling the market, and getting feedback from our loyal customers.
