How did you meet? OKCupid! (The old Tinder). Ross came upon Erica’s profile and messaged her. They went out for drinks, which turned into dinner, which turned into coffee 🙂 The rest is history.
How did you get engaged? We were on vacation in Costa Rica, traveling through the Monteverde Cloud Forest, when our tour guide said we were going to stop at a resort for lunch. The guide suggested that we take photos of this adorable little hand-painted chapel before we ate. When we went inside, we saw that the chapel had breathtaking views of the landscape and was decorated with rose petals and candles and champagne. There was even a guitar sitting there, and Ross picked it up and began to serenade me with our favorite song. That’s when I realized that he had coordinated the whole thing. It was totally swoon-worthy, and it seemed like the longest song ever while she waited for him to finish and pop the question. When he finally did, she obviously said yes. Twice. 🙂
What was the first thing you did after you got engaged? Drank champagne, ate a leisurely lunch, and started wedding planning of course!
Any tips for balancing wedding planning with your everyday busy life? Stay organized. Make a To-Do list and try to knock things off when you have time. Don’t let yourself get overwhelmed by all the other ideas out there (Pinterest can be your best friend and your worst enemy) or let other people decide how you should do things. Do what you want to do, and your wedding will be a unique reflection of the two of you. Also, make sure to communicate and compromise before making decisions. Your partner will surprise you with what they care about. It’s actually very good preparation for married life.
Favorite way to relax together? Concerts and music festivals.
Best date night in? Out? In: Making dinner together and then sitting and chatting about whatever we feel like. Maybe snuggling up for a movie or marathon Netflix or HBO session. Out: Probably cocktails at a hip bar followed by dinner at a new restaurant. Then we’d probably go to a show and dance the night away.
Any favorite recipes? So many. Ross loves chicken parmesan. We went paleo to get in shape for the wedding, so we experimented with a lot of great gluten-free recipes. Almond flour chicken parm with zucchini noodles is pretty amazing, believe it or not.
What do you do for adventure on the weekends? We like to take road trips – maybe go down to Santa Cruz for beach time and to see friends, Big Sur for camping and hiking, or wine country for wine tasting.
What are you most excited for on your registry? Our honeymoon!!
Where are you going on your honeymoon and how did you choose the destination? We’re doing a 3 week tour of the coasts of Spain, France and Italy! We both studied abroad in Europe when we were in college and had great experiences, but felt like we didn’t have the time and money to go everywhere and do everything that we wanted to do. We wanted to share the European experience with each other and knew it would be really romantic. We wanted to go somewhere where we could be active and be surrounded by beautiful scenery, vibrant culture, and amazing food!
Packing tips? Pack light so you can stay mobile. Mix and match. Nobody will know that you wore the same thing two days ago. Also, get a Wallpaper Guide. They’re tiny and have great recommendations.
